The Appenzeller® Extra is like the men of its region of origin, the Alpstein: a strong character but always warm, well balanced. During ripening, the cheese makers selects the best wheels to store them for at least 6 months in a humid cellar whose temperature is maintained at 14 degrees. The cheese thus becomes tasty and irresistible for all lovers of assertive cheese specialties.
